Description
Courthouse Restaurant is run and owned by Conor Mee and Charlotte Carr. Charlotte and Conor met up long before they ever thought of opening a restaurant whilst training in the tourism college in Charlotte's native town of Killybegs in Co Donegal. This was in during the mid 90's. After which Conor worked in Ashford Castle, Australia and Nuremore Hotel in Carrickmacross as Sous Chef. He then went onto to open the highly successful Rosso Restaurant in Dundalk in 2006. Shortly after which Charlotte took the helm as restaurant manager (winning Rosemount Young Restaurant Manager of the Year Award 2006 ) after it's opening, having spent many years as restaurant supervisor in the restaurant at Nuremore. In the autumn of 2009 the two decided to move on from Rosso and take over the former 'Mollys' site in the busy town of Carrickmacross. What some people said was "a difficult time" due to recession, Conor and Charlotte based it as a 'calculated risk' with their ethos of friendly informal service, tasty food and excellent value for money as their recipe for success. Thankfully with tasteful seasoning and a hunger for honest friendly hospitality Courthouse Restaurant today is serving it's guests from Carrickmacross and from far and wide.
